Crunchy Chickpeas

A few months ago I bought the “Daniel Plan: 40 Days to a Healthier Life” by Rick Warren, D. Min., Daniel Amen, MD and Mark Hyman, MD.  I tore through it and really enjoyed every aspect of the book.  Its approach to living a healthier life is focused on the combination of four areas–faith, food, fitness, and community. Having all of those aspects allows us to renew our minds and get us back on track for a healthier way of living. There is a lot of good stuff–whether you are trying to lose weight or simply stay on track and be healthy–that all can learn from reading the book.  What makes this unique compared to other diet or fad lifestyle books is its tie-in to the faith aspect.  For God expects us to be good stewards of our bodies.  “So whether you eat or drink or whatever you do, do it for the glory of God” (1 Corinthians 10:31).

Although I have not started following a meal plan in the book, I know that it’s a resource I will continue to return to for additional information.  The recipes are fabulous!  I am providing one below, that I just made this morning.  Took all of 5 minutes to prep and is a healthy snack that I’ll take to work tomorrow.  Enjoy!

Crunchy Chickpeas



  • 4 cups garbanzo beans, drained and rinsed
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground chili powder
  • 1/2 teaspoon cayenne pepper

Preheat oven to 400 degrees.  Place the chickpeas in a large bowl and toss with ingredients until well coated.  Spread on a baking sheet and bake until crisp, 30-40 minutes.  (Serves 12, 1 ounce each)
